Context: Consumers increasing concern for sustainability particularly in terms of · locally grown food · the methods by which food is reared or grown · general lack of choice offered by increasing supermarket dominance Basic model: Operating a periodic market to run fortnightly in any given location selling a range of generally local food in a relaxed community atmosphere. Produce would be supplied by ourselves from our farm and other local producers/wholesalers. This presently includes fruit and veg, garlic lines, eggs, cheese, bread, preserves, coffee, chocolate, tablet and seasonal meats. Local producers/processors in any given location would be very much encouraged. So far the pilot has been running in Kirkhill Primary School very much to the advantage of the school, allowing them to develop their enterprise and eco-school credentials as well as offering a platform for relaxed interaction with parents and with the community in general. The workforce is drawn from local adults, primary pupils and Inverness High School pupils. |
